What is the process of making Bourbon?

1. Mash Bill Creation: Bourbon must be made from at least 51% corn, with the remainder typically comprising malted barley, rye, or wheat. The grains are ground and mixed with water to create a mash.
2. Cooking and Fermentation: The mash is cooked to convert the starches into fermentable sugars. Yeast is then added to the cooked mash in large fermentation tanks, where it converts the sugars into alcohol, producing a liquid called “distiller’s beer” or “wash.”
3. Distillation: The wash is distilled in a column still or pot still. The first distillation produces a low-alcohol liquid called “low wine.” This is distilled again in a “spirit still” to produce a higher-alcohol liquid known as “new make” or “white dog.”
4. Aging: The new make is transferred to new, charred oak barrels for aging. By law, bourbon must be aged in these barrels, which impart color, flavor, and character to the spirit. The aging process must be a minimum of two years, but many bourbons are aged for much longer.
