Cognac is a specific type of brandy produced from distilled white wine. It must be distilled twice, using copper pot stills, and aged in French oak barrels for a minimum of two years. By the end of the 1700s wine was made from both white and red grapes, which were grown throughout France, but mainly in Burgundy. However, by 1720 there was a serious shortage of sparkling wine due to the increase in consumption of red wine.
