For the production of the Bayou Rum only sugar cane from South Louisiana is used. The sugar cane is pressed in the oldest mill in the USA. The molasses is distilled in Copper Pot Stills and stored mainly in bourbon barrels, in the Solera process.
The Bayou Single Barrel Rum is stored for two and a half years in bourbon barrels in the Solera process.
Tasting notes:
Colour: Amber.
Nose: Smoked oak, figs, red berries, spices.
Taste: Notes of plums, pepper, dry oak, earthy aromas.
Finish: Long lasting.
