When absinthe was banned in France, a substitute for the spirit, based on anise, was sought.
The name “Pastis” is therefore a composition of “pastís” (mixture) and “pastiche” (imitation).
The production takes place by alcohol, anise, liquorice as well as herbs and spices.
Louche effect?
A milky cloudiness when water is added, the so-called Louche effect, occurs due to the essential oil Athenol.
The additional water releases the oils previously encased in the alcohol and clouds it.
Tasting notes:
Colour: Straw yellow.
Nose: Spicy, notes of star anise, licorice, herbs.
Taste: anise, licorice.
Finish: Long lasting, fresh aniseed aromas
