At the end of the process, distilled rum has a lower percentage of water than raw rum. Rums are typically aged in oak barrels for up to 3 years, but some are aged for much longer.

By selecting better ingredients, rum can be paired with several savory dishes to achieve a bold taste. The simmering syrup is laden with yeast and then gradually cooled on the drum of a still. The yeast then clumps into clusters called “kernels” that release alcohol as they ferment. The fermentation process is allowed to continue for about a week.
