The creator of light rums will extract the color left over from the rum aging process, while darker rums will be mixed with caramel to modify their color .The fermentation process begins with molasses, which is first boiled in water to create a thick syrup. The simmering syrup is laden with yeast and then gradually cooled on the drum of a still. The yeast then clumps into clusters called “kernels” that release alcohol as they ferment. The fermentation process is allowed to continue for about a week.
